Tundub, et on olemas justkui kaks \u00e4\u00e4rmust \u2013 need kes v\u00e4ldivad igasugu suhkruid nagu tuld ning need, kes sellele \u00fcldse t\u00e4helepanu ei p\u00f6\u00f6ra.&nbsp;<strong>\u00dcldiselt ei ole muidugi suhkruid vaja karta, kuid t\u00e4nap\u00e4eva toiduainet\u00f6\u00f6stus on tekitanud olukorra, kus saame neid koos oma igap\u00e4evase toiduga liiga palju.&nbsp;<\/strong>See k\u00f5ik on tinginud olukorra, kus peamiselt on s\u00fcsivesiku allikaks toidus suhkur. S\u00fcsivesikud peaksid tulema ennek\u00f5ike k\u00f6\u00f6giviljadest, teraviljatoodetest ning v\u00f5imalikult v\u00e4he lisatud suhkrutest ja neist valmistatud toodetest.<\/p>\n<p>Nagu \u00fctleb vanas\u00f5na: \u201cHeal lapsel, mitu nime\u201d, on ka magusa maitsega suhkru puhul. \u201cSuhkur\u201d on kokkuleppeline k\u00e4ibem\u00f5iste, mida kasutatakse p\u00f5hiliselt sahharoosi, aga ka n\u00e4iteks gl\u00fckoosi, fruktoosi, maltoosi ja laktoosi (ehk piimasuhkur) kohta. Looduslikke suhkruid, nii sahharoosi, fruktoosi kui ka gl\u00fckoosi, sisaldavad m\u00e4rkimisv\u00e4\u00e4rselt puuviljad ja marjad, laktoosi piim ja piimatooted ning maltoosi idandatud odraterad.<\/p>\n<p>\u00dcldiste toitumissoovituste kohaselt ei tohiks lisatud suhkrud anda \u00fcle 10% p\u00e4evasest energiast ning ideaalis v\u00f5iks see j\u00e4\u00e4da isegi alla 5%. Kui inimese p\u00e4evane energiavajadus on n\u00e4iteks 2000 kcal, siis lisatud suhkrute kogus k\u00f5ikides toitudes kokku peaks j\u00e4\u00e4ma alla 50 grammi p\u00e4evas. K\u00f5ige lihtsamalt \u00f6eldes on rafineerimine puhastamine v\u00f5i siis filtreerimine. Ehk siis protsess mille k\u00e4igus eemaldatakse toorainest k\u00f5ik lisaained, mis v\u00f5iksid p\u00f5hikomponendi omadusi kas parandada v\u00f5i pikendada selle s\u00e4ilimise aega. Rafineeritud toiduained on tavaliselt valge v\u00e4rvusega.&nbsp;<strong>Looduslikult on k\u00f5ik maa seest kasvavad toiduained v\u00e4rvilised.<\/strong>&nbsp;Ka meile valge v\u00e4rvuse poolest tuntud suhkur ja riis on looduslikult hoopis pruuni v\u00e4rvusega. Pruuni v\u00e4rvi annavad riisile idu ja kliid mis rafineerimisel eemaldatakse. Ehk siis tavaline valge riis on toitainetest j\u00e4rele j\u00e4\u00e4nud t\u00e4rklis. T\u00e4rklis aga muutub lagunedes meie organismis limaks ning on paljude t\u00f5siste terviserikete p\u00f5hjustajaks. Probleem ongi selles, et k\u00f5ik need lisaained, mis rafineerimisel eemaldatakse, on \u00fcliolulised meie organismi ainevahetuses. Eemaldades \u00fche komponendi ajame sassi kogu terviku. S\u00fc\u00fces \u201cpoolikut\u201d toitainet tekib meie seedes\u00fcsteemis t\u00f5rge, sest organismil puuduvad vajalikud ained selle l\u00f5hustamiseks ja neutraliseerimiseks.<\/p>\n<p>Miks siis \u00fcldse toiduained rafineeritakse, kui toiduained naturaalsel kujul on teistsuguse koostisega ning see eemaldab neist k\u00f5ik kasuliku? K\u00f5ige suurem ning ilmselt ka olulisem p\u00f5hjus on toote s\u00e4ilitamise ja transpordi kulutuste v\u00e4hendamine. N\u00e4iteks naturaalsel kujul sisaldavad riisiidud ohtralt \u00f5lisid, mis hakkavad soojas temperatuuris kiiresti r\u00e4\u00e4suma ning v\u00f5ivad kogu saagi \u00e4ra rikkuda. Sellisel juhul tuleks riisi s\u00e4ilitada teatud temperatuuril. Kui aga v\u00f5tta arvesse toiduainete t\u00f6\u00f6stuses olevaid koguseid, siis v\u00f5ib arvata, et selliste tingimuste tagamine on \u00fcsnagi kulukas. N\u00e4iteks pruuni riisi seostati vaesusega. Aastak\u00fcmneid tagasi oli riisi rafineerimine v\u00e4ga kulukas protsess ning valget v\u00e4rvi riisi s\u00f6\u00f6mine n\u00e4itas k\u00f5rgklassi kuuluvust. \u00d5nneks on aga inimeste teadlikkus ning t\u00f5ekspidamised ajaga muutunud ning t\u00e4na on olukord hoopis vastupidine.<\/p>\n<h2>Lisaained ehk E-ained<\/h2>\n<p>Lisaaine v\u00f5i rahvap\u00e4raselt tuntud ka kui E-aine, on looduslik v\u00f5i s\u00fcnteetiline aine, mida lisatakse toidule tehnoloogilisel eesm\u00e4rgil. Lisaaineid kasutatakse n\u00e4iteks toidu paremaks s\u00e4ilitamiseks (s\u00e4ilitusained), vajaliku konsistentsi saavutamiseks (stabilisaatorid, tarretavad ained, emulgaatorid), toidule atraktiivsema v\u00e4rvuse andmiseks (toiduv\u00e4rvid) jne.&nbsp;<strong>Lisaainete kasutamise vajadus toiduainetet\u00f6\u00f6stuses peab olema p\u00f5hjendatud.<\/strong>&nbsp;See t\u00e4hendab, et lisaained on lubatud vaid juhul, kui toidu omaduste parandamist v\u00f5i toitev\u00e4\u00e4rtuse s\u00e4ilitamist ei ole v\u00f5imalik saavutada muude tehnoloogiliste v\u00f5tetega. Koduste hoidiste s\u00e4ilitamiseks kasutatakse n\u00e4iteks peamiselt kuumutamistehnikat koos suhkru (moos, kompott), soola (let\u0161o, ad\u017eika) v\u00f5i \u00e4\u00e4dikhappega (marineeritud kurgid v\u00f5i -seened). V\u00e4rskeid saadusi nagu k\u00f6\u00f6givilju v\u00f5i marju ja liha ning kalatooteid s\u00e4ilitatakse kodutingimustes peamiselt k\u00fclmutades. N\u00e4iteks peedist eraldatud peedipunane ehk betaniin (E162) v\u00f5i vetikatest eraldatud paksendaja agar-agar (E406). Jaanikaunapuust saadav paksendaja ja stabilisaator jaanileivapuujahu (E410). Kommidele l\u00e4ike andmiseks kasutatav mesilasvaha (E901) ning \u0161okolaadis vedeldajana kasutatav emulgaator sojaletsitiin (E322). Looduslik tarretav aine pektiin (E440), mida saadakse marjadest ning \u00f5untest saadav happesuse regulaator \u00f5unhape (E296). Looduslikud lisaained on tervisele k\u00f5ige ohutumad.<\/p>\n<h3>Loodusidentsed E-ained<\/h3>\n<p>Ained, mis esinevad toidus looduslikult, kuid on toidut\u00f6\u00f6stuses lisaainena kasutamiseks saadud keemilise s\u00fcnteesi teel. N\u00e4iteks v\u00e4ga laia kasutusega hallitusevastane s\u00e4ilitusaine sorbiinhape (E200) mida leidub looduslikult pihlakates, j\u00f5hvikates ja pohlades. C-vitamiini allikas askorbiinhape (E300), mis looduslikult sisaldub sidrunis, mustas s\u00f5stras ja astelpajus. Lisaks ka sidrunhape (E330), mida kasutatakse laialt antioks\u00fcdandi, konservandi ja happesuse reguleerijana.<\/p>\n<h3>S\u00fcnteetilised E-ained<\/h3>\n<p>Ained, mis saadakse ainult keemilise s\u00fcnteesi teel ning milledele ei ole looduses analoogi. N\u00e4iteks antioks\u00fcdandid but\u00fc\u00fclh\u00fcdroks\u00fcanisool (E320) ja but\u00fc\u00fclh\u00fcdroks\u00fctolueen (E321) v\u00f5i asotoiduv\u00e4rvid. Paraku on aga just nende E-ainete kasutusala m\u00e4rkimisv\u00e4\u00e4rselt suur.<\/p>\n<h4>Neli peamist lisaainet, mida tuleks kindlasti v\u00e4ltida:<\/h4>\n<ul class=\"content__list\">\n<li>Kunstlikud s\u00e4ilitusained n\u00e4iteks naatriumnitrit (E250) ja naatriumnitraat (E251).<\/li>\n<li>Kunstlikud v\u00e4rvained ehk asov\u00e4rvid n\u00e4iteks nagu tartrasiin (E102), kinoliinkollane (E104), karmoisiin (E122) jms.<\/li>\n<li>Maitsetugevdaja E621, mida kasutatakse soolastes toitudes. N\u00e4iteks lihatooted, kartulikr\u00f5psud, puljongikuubikud jt. See on ka \u00fcks sagedasemaid k\u00f5rvaln\u00e4hte tekitavaid aineid.<\/li>\n<li>Kunstlikud magusained n\u00e4iteks atsesulfaam K (E950), aspartaam (E951), sahhariin (E954) ja sukraloos (E955). S\u00fcnteetilised magustajad ei anna k\u00fcll kaloreid, kuid stimuleerivad isu ning suurendavad soovi s\u00fcsivesikute j\u00e4rele. Seda seet\u00f5ttu, et koos magusainega sai keha k\u00fcll magusa maitse, kuid kalorid j\u00e4id saamata ning see h\u00e4irib isu kontrollmehhanismi. Kunstlikud magusained soodustavad rasvade ladestumist ning pidurdavad rasvarakkude lagundamist energia tootmise protsessis.&nbsp;<strong>Seet\u00f5ttu tuleks alati enne \u201csuhkruvaba\u201d sildiga toote ostmist lugeda, mis suhkrut antud tootes asendab.<\/strong><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>E-ainete v\u00e4ltimiseks eelista v\u00f5imalusel alati mahetoitu, mis on vaba kunstlikest lisaainetest. J\u00e4ta enamlevinud ohtlike lisaainete nimed endale meelde v\u00f5i kirjuta \u00fcles ning loe poes teadlikult pakendeid. Toitu mitmek\u00fclgselt, et v\u00e4ltida lisaainete liigseid koguseid ja kuhjumist organismi. Eelista alati v\u00e4rsket ja t\u00f6\u00f6tlemata toitu ning valmista seda v\u00f5imalikult palju ise kodus.
